I was at Disneyland at few days ago, and was in the queue line for one of the rides when I found a snail that must have been stood on by somebody. It has very little shell, I have brought it back home with me to England to care for it. I have fed it lettuce and cuttlebone and am spraying it every few hours so it doesn't dry out. Is there anything else that I can do? And is it possible for it to regrow its shell? If it is how can I help it do that?

It's possible for them to regrow their shell if the damage is not too bad, and especially if the damage is by the shell lip. If its severely crushed though it may not recover though. The diet of cuttlebone will help but it will be better if you include a variety of fruits and vegetables in its diet.
