If a snail has carried eggs, does it make sense to wait until they hatch to select the largest?Or is it better to destroy extra eggs?

Its more humane to destroy the extra eggs, however personally I don't agree with either. If it was me, id rear all of the babies for 1-2 month and then offer the ones I didn't wish to keep, to other snail keepers for the price of postage to guarantee quick demand. Unless of course you have the adequate space and time flexibility to sell them for a profit?
Depending on the species, it could take forever for you to sell them for profit and you may find that you are faced with the same problem regularly.
If you do decide to destroy the excess eggs, this should be done upon their discovery. Its very beneficial to freeze the excess eggs and then feed them to the snails you allowed to hatch.
Those eggs are ultra high in protein as well as calcium and will give your remaining young a great head start to life.
