You may find it goes squidgy. But sweet potato keeps in the cupboard for a couple of weeks and then in the fridge in a bag for a couple so just buy one at a time

Are the sweet potatoes going to be cooked prior to freezing? If they are frozen raw and then thawed out, I would imagine they are okay to give to snails. Raw food is more nutritious for snails than cooked, but I've given small amounts of cooked pumpkin to mine and they enjoy it almost as much as raw sweet potato.
I buy the smallest sweet potato I can find and slice very thin pieces off. To keep it from drying out I wrap the cut end with a piece of plastic cling wrap, secured with a rubber band, and keep it in the refrigerator for quite a while. If there are any bruises on the sweet potato it will start going bad a lot sooner, though.

I have kept many weeks cut sweet potato in fridge just remember always cut with clean knife and leave it on grid. Till cutting edge has been dried and seals all juices in inside of sweet potato. I don't use plastic to wrap around because moisture inside of plastic seem to make sweet potato go bad faster. Sweet potato after that can be moved then to clean root vegetable box in bottom of the fridge. More cooler fridge longer the vegetables stay fresh. I sometimes froze some vegetables for snails if I don't personally like how they taste or can't eat them. I think it's better than throwing something away. Frozen food is always little bit less nutrisional but you can fix it with adding some fish flakes to food after it's melted. When I had just few fulicas I use to buy them 3 to 5 smallest vegetables I could find. I fed them about week that amount of food and next week bought other different 3 to 5 small vegetables and that how they got vary diet.
