I completely understand your concern for your snails, and I assure you everything will be just fine! I would also like to say I think you are an amazing snail parent, keep up the great work! First, your snails could be becoming inactive for a number of reasons. But first, I would just make sure that their enclosure is the correct humidity and temperature, like you said. You can put a little thermometer or hygrometer in there to measure the humidity and temperature, and that might help you regulate it a bit better. It being winter probably is not effecting them, unless the cold is getting to them. They could be inactive for other reasons, but I will link a page that can tell you more about that at the bottom. Overall though, your care for them sounds amazing!
As for the babies, the clutch that your snails laid sounds pretty small. It could be that these babies are runts, but since they have already hatched, just keep raising them and see what happens. Baby snails usually do not eat much, and the rate that they are growing sounds ok to me. Just keep feeding them, and watching them, and see how their growth goes, etc. It also could be that the other two got through the lid, but they couldn't have got far. Search every spot in their tank, and then search every spot around their tank. Hopefully you find the other two!
