In my snail tank I have shoots appearing, am using sterilised mud (one of the blocks that comes dry with coconut hair in and you add water) so I presume it's nothing that was in there - but possible tomato seeds germinating, or cucumber. Will these harm the snails if they eat them? Should I take them out, or will it be nice for them and I should leave them in?

They probably are seeds from food you placed in the tank. The majority won't do any harm and snails seem to know when something is inedible. Also they are known for their fondness for young, edible shoots. I'd leave them in.
