could i use a (chicken egg) incubator to hatch my snail eggs. if so what temperature would i need to keep them at. does the temperature vary with each species or can i keep all at the same temp.

It varies yes. Snail eggs need same condititions than snail it self and it depends of species what temp and humidity needs to be.

so could i use a incubator the so that the eggs stay at a constent temperature. would this help increase the hatch rate.

Yes if conditions stay ideal all the time and don't change too much. It's really good for eggs so they develop well and more likely hatch. Of course week or few after hatching some weakest ones might die but not too many if kept right..

oh good i was gonna get a reptile one that keeps the humidity but it cost too much. so i will buy a normal chicken one. i will keep the snails in the incubator for at least 2 weeks after they hatch to give them more of a chance

Remember check humidity on a regular basis so eggs will not dry out.
